Morello cherry clafoutis



A simple and delicious recipe….

  • 1lb Morello cherries, washed, stemmed and pitted
  • 1/4 cup sugar, preferably cane sugar or turbinado
  • 1/3 cup flour, I like yellow pea flour …
  • 3 eggs
  • 1 cup cold milk
  • 1 pinch salt
  • 1/2 teaspoon vanilla

Preheat oven to 190/375

Butter an ovenproof dish, pour in the cherries and sprinkle with half the sugar. Then, in a mixing bowl, add the flour, remaining sugar, eggs one at a time while whisking well, cold milk and vanilla. The mixture should have a smooth, lump-free consistency.

Gently pour the liquid over the cherries and bake for around 45 minutes, or until the top is golden and slightly puffed.

You can sprinkle a little sugar on top, or serve with crème fraîche and a drizzle of maple syrup.
